Grilled Cheese and Honey

Soak a Honey Ridge Farms grilling plank in water for an hour or more. Preheat grill to medium-high heat (400 degrees F.) Place cheese of choice (brie, Camembert, cheddar, blue, etc.) on soaked plank. Cover cheese with topping of your choice: Raspberries, blackberries, walnuts, gourmet honey, honey cremes or balsamic honey vinegar reduction. Place plank with cheese on the grill. Planks will smolder and smoke when applied to direct heat. Close grill lid and smoke 12 to 17 minutes, checking periodically. If flames occur, douse with water. Remove cheese from grill when slightly golden brown and topping is hot and bubbly. Serve immediately with freshly sliced baguette or crostini, your favorite crackers, and several large spoons.
